Ice cream is my favorite dessert–it cools down my brain, overheated by midterm exams. Also, sweets help me forget stress. Since coming to Seattle to study, I have tried several ice cream shops, and I finally found one with some of the best ice cream in the city: Indigo Cow.
Indigo Cow has three locations: Seattle, Bellevue, and Los Angeles. The Seattle shop is located at 1911 N. 45th St., Seattle, WA 98103.
They sell soft-serve ice cream, allowing people to select the flavor and add toppings. Among the flavors, Hokkaido milk is the most popular and serves as Indigo Cow’s signature flavor. Keisuke Kobayashi, founder of Indigo Cow, grew up in Hokkaido and wanted to share the flavor of home.

To order ice cream, customers choose the size, flavor, cup or waffle cone, and toppings if desired. The price depends on the selected options. My favorite combination cost me $8.50, excluding tax and tip.
I have eaten ice cream there more than five times and tried various combinations. After several visits, my favorite combination is a regular-size Hokkaido milk soft serve in a cup with M.B.R.–a topping set that includes mochi, brown sugar syrup, and roasted soybean powder.

This combination is wonderful. The nutty flavor of the roasted bean powder emphasizes the Hokkaido milk, while the brown sugar syrup and milk make it taste like brown sugar milk tea. The mochi adds a chewy texture, allowing people to savor the harmony of flavors. The mochi’s texture is another reason I especially like this shop.

Besides my favorite combination, I also tried Hokkaido milk flavor with Mitarashi Dango and matcha with M.B.R toppings. Mitarashi Dango is a Japanese dessert made of mochi coated with sweet soy sauce. If you want to experience the Japanese-style flavor, adding this topping to the milk ice cream is a great choice. The salty-sweet taste of the soy sauce balances the ice cream’s sweetness.
The matcha flavor leans more toward sweetness rather than the depth of the tea flavor, making it a good option for those who prefer a milder matcha taste. Personally, I enjoy the Hokkaido milk flavor more.

While I enjoy the taste of Indigo Cow ice cream and have visited many times, there are a few things that made me uncomfortable. First, the quantity of ice cream varies, depending on the clerk. Even though I paid the same price and ordered the same regular size, one clerk served a generous portion, while another gave a smaller amount.

Another issue is the seating area. Next to the shop, there are three tables where customers can sit down and enjoy their ice cream. Eating ice cream while sitting with friends is a peaceful and rejuvenating experience. However, on rainy days, outdoor seating is not ideal. When the weather is bad, Indigo Cow becomes more of a grab-and-go spot. If you visit on a sunny, warm day, you’ll have a much better experience.
Despite these minor drawbacks, I highly recommend Indigo Cow for its unique topping options and delicious flavors. Whether you’re an ice cream enthusiast or just looking for a sweet treat, this spot is worth a visit.
